Baked eggplant with pepper


Step 1

Preheat the oven to 180º C. Wash the eggplants, remove the stem and cut them in half lengthwise. With a pointed knife, make several crisscross incisions in the pulp without perforating the skin (being careful not to cut yourself). Salt them abundantly and leave them face down at least 15 minutes to drain.

Step 2

Separately, mix the two types of “El Avión” paprika and a bit of salt with the oil. Wash and dry the eggplants and distribute this mixture uniformly over them.

In a baking pan, place them in the preheated oven and bake around 35 minutes (check with a fork that they are soft).

Step 3

Serve hot.

  • 1 pinch “El Avión” hot paprika
  • 2 tablespoons olive oil
